Kolhapuri Bhindi Fry

Raw Materials

250 gms fresh baby bhindi (washed and vertical cross cut, dont cut into pieces), 100 gms potato ( peeled and vertically cut), 1 onion (vertically cut), 1 tomato ( fine cut ), 15-16 garlic cloves (crushed), 25 gms Relish bhindi fry masala,20 gms roasted groundnut (coarsely ground), 15gms jaggery (greated),2 spoons fresh coriander leaves,100 gms Edible oil, salt to taste, and seasoning material

Take bhindi, potato and fry them in 100 gms of oil separately and take out. Take 4 spoons of the same oil and fry the onion till brown colour. Heat the non stick pan and put 6 spoon of same fried oil, add season with mustard seed, sesame,asfoetida, turmeric and curry leaves, add crushed garlic and fry, add chopped tomato and mix well. Add Relish Bhindi Fry masala and add fried bhindi, potato,onion, groundnut, jaggery, salt and corriander leaves. shut the lid for 2-3 minutes. Serve hot with Chapati, Roti & Rice.
